Sweet Potato Casserole Recipe with Pecan Topping

Original Family Recipe
Sweet Potato Casserole by: Karla Rae Hodge Baggett
Course: Casserole
- 1 tall can of sweet potato yams or 2 short cans
- 2 eggs
- 1 cup sugar
- 1/2 cup butter ( 1 stick )
- 2 tsp vanilla
Topping
- 1/2 cup butter ( 1 stick ) melted
- 4 tsp vanilla
- 1 cup brown sugar
- 1/2 to 1 cup of pecans
Directions
Drain sweet potatoes, whip together the potatoes, add eggs, sugar, butter and vanilla. Whip this by hand till combined and the lumps are mostly gone. If you like it smoother then whip it longer until well blended. Put casserole this in a large round casserole dish. Now combine in a bowl the topping ingredients. Cover the casserole with the topping.
Baking Instructions
350 degrees for 1 hour uncovered ( a large casserole dish is needed since this will rise while it is baking in the oven )
Serving Ideas
Serve sweet potato casserole with turkey, ham, chicken, or other holiday favorites. It also works well for Sunday dinner or any meal that needs a sweet side dish.
